谷芽，又称蘗米、谷蘗、稻蘗，类似于麦芽，以稻米或小米为原料，浸泡使其发芽、发酵后产生麦芽糖，之后煮过、晒干制成的产品。可作为食品，可用于制酒醪、制麦芽糖，也可以作为中药使用。中医认为，谷芽可帮助消化，有消食化积的功效。
