牛者，四足之畜也，隸偶蹄目牛科牛亞科。有角有尾，能耕能乳，人之所養。牛之雄者曰牡，雌者曰牝。牡牝相合，生子孫，不絕於世。牛之色有黃、黑、白、紅、青、雜，或一色或兩色或三色。
牛之性溫和而勤勞，不辭勞苦，忠於主人。人食其肉，衣其皮，用其角為器，用其糞為肥。牛有聲而無言，能聞能視，不知善惡。凡人欲養牛者，當以草料之，以水飲之，以棒策之，以籠絡之，則牛可使為人用矣。
故云牛者，其力巨大而能耕田，其乳甘美而能食人，其皮厚重而能衣人，其肉鮮嫩而能養人，其骨堅硬而能器人。牛之用，不可勝數也。是以古之聖王，以牛為祭祀之禮，以牛為農業之本，以牛為財富之象。
牛以其至誠之心，象天地之化育，遂為上古之良友也。
