Chimay er eit belgisk trappistøl som har vorte brygga i klosteret Abbaye Notre-Dame de Scourmont i Chimay i Vallonia i Belgia sidan 1862. Det er ein av sju øltypar som får bruka nemninga «trappistøl». Bryggeriet produserer tre variantar for kommersielt sal og éin variant berre for munkane. Bryggeriet vart modernisert i 1988 og produserte i 2005 120 000 hektoliter i året. Sidan 1876 har klosteret òg laga ost, og sel for tida fire ostetypar.
I 1850 vart munkane frå Westvleteren i Flandern inviterte til å oppretta eit cistersienerkloster i Chimay. Klosteret begynte å brygga øl i 1862.
Som hjå dei andre trappistbryggeria, går inntektene av ølsalet til drift av klosteret og gode formål. Bryggeriet betaler leige til klosteret, som vert brukt til drifta av klosteret, medan overskotet av salet går til veldedige formål i regionen.
Vatnet til brygginga kjem frå ein brønn innanfor klostermurane. Restprodukt frå meskinga blir brukt som dyrefor. Ølen vert ikkje filtrert eller pasteurisert. Han vert tappa på flaske på ein fabrikk 12 km frå klosteret, for at denne industrielle prosessen ikkje skal forstyrra klosterlivet. Ølen blir så ettergjæra på flaska i tre veker før det blir sendt ut til sal. 20 % av produksjonen blir seld på eksportmarknaden.
